<*n>阿拉伯胶为水溶性胶体，而且具有高度的可溶解性，平常的胶类在溶水的过程中仅能****多加进约5~ 8<*n>％的胶体而已即达饱和，而阿拉伯胶与水的混合比则可高达<*n>60<*n>％，在高含量时能有非常高的黏度表现。因其为水性胶，故不会溶解於油与酒精，但若酒精含量低于<*n>15<*n>％时，<*n>则可以溶解。

<*n>阿拉伯胶是一种安全无害的增稠剂，并在空气中自然凝固而成的树胶。阿拉伯胶还可以广泛用于饮料生产，比如在软饮料浓缩汁的生产中它可以稳定风味和精油。它也被应用于糖果制造，像传统的硬（酒）橡皮糖、软糖，也可以作为 <*n>棉花糖的泡沫稳定剂。

<*n>在食品添加的应用方面，例如做为饮料中的乳化助剂，保持香味的护囊剂，食品粘著剂，糖果或巧克力的披覆(Coating)，加强口感，****沉淀等等数十种用途．尤其在现代人对食品健康的要求下，天然植物性的阿拉伯胶含有多量的膳食纤维符合健康食品的要求，此一高纤食品特性成为现代食品添加的好原料。

<*n>阿拉伯胶常用来制作粉末油脂，经常配以明胶一起使用，因为它很好的水溶性和乳化性，在包埋过程中可以使包埋物的微*化效率增加。是食品工业中用途****广及用量的水溶胶，目前的全世界年需要量仍保持在大约4-5万吨。        

阿拉伯胶具有良好的乳化特性，特别适合于水包油型乳化体系，广泛用于乳化阿拉伯胶是一种碳水化合物聚合体，可在大肠中被部分降解。它可以为*补充纤维素，与淀粉和麦芽糊精相比，其能量值还不到一半。更具体的说，阿拉伯胶是阿拉伯半乳糖寡糖、多聚糖和<*n>蛋白糖的混合物。根据来源不同，多糖组分中的 D －半乳糖（阿拉伯树胶）和 L －树胶醛糖比例也<*n>不相同。与 <*n>金合欢树相比， <*n>阿拉伯树胶含有更多 4 － O －甲基－ D －葡萄糖醛酸，而 L －鼠李糖和*的 D －葡萄糖醛酸的量较少。
